This recipe is a version of one I got from my local homebrew store. They call it the "Fat Man" Porter and it's AMAZING. This was my second brew, and my first partial-mash recipe. Everybody who tried this beer loved it, and I blame this one for my current obsession with brewing.
This brew came out with a beautiful dark color and a significant, lively, brown head (poor retention though). The body was thinner than I'd expect and like. The flavor was fantastic with hints of coffee and chocolate.
The ingredients listed below are based on what the recipe says as written from the homebrew store plus what I remember from the guy who filled the order for me. I could almost swear he modified the specialy malts when he was putting it together. I believe he put a small amount of black patent malt in the mix.
- 2 cans (6.6 lbs) Breiss Dark liquid malt extract
- 1 lb dark chocolate malt
- 1/2 lb 60L light crystal malt
- .8 oz Northern Brewer hops
- .25 oz Fuggles hops
- 1 tablet whirlfloc
- 1 oz gypsum
- WhiteLabs Liquid Irish Ale Yeast
- 3/4 cup dextrose for primer before bottling
The hops were whole hops and were placed in muslin socks for addition to the brew pot. Likewise the specialty malts were placed in a muslin sock for the mash.
Add the specialty malts to ~2gal water and bring to ~150 F for 60 min. After 60 min remove the sock containing the malt and "sparge" by pouring 1/2 gal of warm water over the sock into the mash.
Increase the temp towards a boil- add the extract. Here's the boil progression:
- 60 min - .4 oz Northern Brewer hops - bittering
- 30 min - .4 oz Northern Brewer hops - flavoring
- 15 min - whirlfloc & gypsum
- 5 min - .5 oz Fuggles hops - aroma
After the boil add to cold water in the fermenter, and then top off with more cold water.
Fermentation took 7 days, in hidsight I wish I would have given it a couple more.
I didn't record the gravities on this one.
